Cabernet Franc Dalle Ore 2020

The Cabernet Franc from the family-run winery Dalle Ore is a Veneto red wine with a balsamic and spicy aromatic profile. Originating on the Spanish side of the Pyrenees, Cabernet Franc seems to have been brought to France by pilgrims returning from Santiago de Compostela. This very ancient vine, which can be traced back to the Carmenets family, then spread to the Bordeaux area and the Loire. As early as the 18th century, Cabernet Franc was first cultivated in the Veneto region, where it has established itself over the centuries as one of the best-adapted international vines.

Dalle Ore Cabernet Franc is an expression of the pure blackberry variety of the same name grown according to certified organic and biodynamic farming principles. The rows, located at an altitude of approximately 300 metres above sea level, are planted on clayey soils of volcanic origin characterised by an abundant presence of mineral substances. Harvesting is generally carried out by hand around mid-September, and the grapes are then mellowed in 40-hectolitre oak vats for spontaneous alcoholic fermentation in contact with the skins. Once the fermentation process is complete, the mass is racked into 30-hectolitre oak casks for the 24-month ageing that precedes bottling.

The Veneto Cabernet Franc from the Dalle Ore estate has an intense ruby red colour with purple hues. The nose evokes fruity and floral suggestions of blackberry, blueberry, elderberry, rose petals and violet, combined with delicate spicy nuances and pleasant vegetal and balsamic tones. Dry, warm and enveloping on the palate, with silky tannins accompanying the lingering finish refreshed by a pleasant minerality. A Cabernet Franc that goes very well with charcuterie boards or mature cheeses or with red meat and game dishes.
