The blend consists of Cabernet Sauvignon (50%), grown in Erbusco, Merlot (25%) from Cazzago San Martino and Cabernet Franc (25%) harvested in Passirano. These are historic vineyards over 30 years old, particularly suited for the production of grapes for red winemaking. Harvests are manual, with selection in the vineyard of only the best bunches, which are then brought to the winery in small crates. The grapes are vinified separately, respecting the different ripening times of the three varieties. After destemming, temperature-controlled fermentation begins, with maceration on the skins lasting about 20 days and frequent pumping over and punching down. After racking, the wines are racked into new French oak barrels. The blend is then created, and the Maurizio Zanella continues \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003ematuration in wood for about 12 months\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e before being bottled.
